A simple dish to whip up when you are short on time and big on being healthy. I made this as part of the menu for thanksgiving and it turned out just right.
Serves four to six
500 g /1 lb green beans
1 oz/ 25 g slivered almonds
2 tbsp lemon juice
1/2 stick butter
salt and pepper
1. Bring a pan of lightly salted water to boil. Add the beans and let simmer for 8-10 min. or until just tender but still retaining a slight crunch.
2. Meanwhile, melt the butter in a skillet. Add the almonds and cook over low heat for 3-5 minutes. Do not let them char. Stir in lemon juice and season to taste with salt.
3. Drain the beans and add to the skillet. Stir well. Transfer to serve and enjoy them warm.
