(Kalkals- Indian Christmas delight)
1½ cup- Maida (All purpose flour)
¼ cup- Rava (cream of wheat)
½ cup butter
3 pods cardamom (powdered)
1 cup sugar
Sieve the flour and add the rava. To this mixture add the sugar and blend. Keep this aside.
In a separate bowl, beat the eggs till they become fluffy and frothy. Pour this into the flour mixture and add the melted butter into it. Sprinkle the powdered cardamom and knead them all together.
The dough should be pliable and should be the kind that can be rolled out to make pizza bases or chapattis.
These can be cut into shapes of various kinds. Make several little balls, the size of a 50 cent or a rupee coin. Flatten it with the palm of your hands and depress the back of a fork into it to make a pattern. Once this is done, gently roll it over to make it tube shaped.
Heat oil in a pan, and drop a bunch in. Make sure the flame is not too high or they will turn black very quickly. Fry them till they turn golden brown. Drain excess oil onto a paper towel. Serve as a snack with some coffee or tea.
